Chicken Burrito Skillet

This easy chicken burrito skillet cooks in one pan on the stove top. Your favorite burrito ingredients are cooked up in one skillet pan.

 

Recipe:

1 lb (454g) Chicken Breast

2 Tomatoes

1 Cup Pre-Cooked or Canned Black Beans

1 oz (28g) Green Onions

4 Tortillas

2 oz (57g) Cheese Blend (Mexican Style) Cheddar Monterey Jack Asadero Blanco

1 Avocado

1 Small Onion

1-2 Tbsp Enchilada Sauce

1 Tbsp Olive Oil

1 Tbsp Sour Cream Taco Seasoning

Preparations:

1- Dice the onion and tomatoes. 2- Chop the chicken breast. 3- Slice the tortillas. 4- Mince the green onions.

Directions:

1- Fry the onions with olive oil until golden. 2- Stir in taco seasoning and chicken and continue frying for 5 to 10 minutes. 3- Stir in enchiladas sauce, 1 dice tomato, black beans, and as much as salt you would prefer. 4- Pour in one cup water. 5- Over medium heat, Simmer the mixture for 15 minutes or until water is evaporated. 6- Add tortillas and cheese blend and continue heating for 2 more minutes. 7- Top with tomato, avocado, sour cream, and green onions.
