Traditional Whey Aubergine from Semnan

Aubergines are a specialty of Semnan Province, northern Iran. Their good taste and lack of seeds may be due to the desert climate in this area. The people of Semnan make a wide variety of aubergine dishes in the summer. One of these is whey aubergine which is a delicious traditional.

Ingredients (serves 3)

500g Aubergines

2 tbsp caramelized onions

6 garlic cloves

250g Liquid whey

3 tbsp crushed walnuts

Sauté mint

Salt, pepper, and turmeric to taste

Direction:

Peel the onions, sprinkle with salt and allow to rest. Wash after 15 minutes, dry, and fry.

Sauté the caramelized onions with the crushed garlic, mint, salt, pepper, and turmeric. Then add the aubergines to the mixture plus a cup of water. Lower the heat and allow to cook.

When the aubergines are cooked, add the crushed walnuts. Dilute the whey with a little water if there is not enough liquid left in the pan. Otherwise, just add the whey to the aubergines and mash everything together.

Allow to cook for another 15 minutes after adding the whey. Your dish is ready now. Garnish with some fried garlic, sauté mint [pour a little oil in a small pan and add a tsp of dried mint. Fry for one minute], and walnuts.

Since aubergines cause bloating, this is countered with the walnuts and mint. If you are sensitive to aubergines, use more mint and walnuts.
