Persian Food/ White Onion Dolmados

Three points are very important in cooking – taste, smell, and appearance of food. These white onion dolmados have all three characteristics at the same time and will make a delicious sight for your table.

Ingredients (serves 2-4)

200g Minced meat
1/8 tsp Turmeric
½ cup Cooked rice
150g Chopped herbs (parsley, chives, tarragon, dill weed, mint, sage, fresh garlic
150g Crushed lighvan panir
4 large Onions
50g Melted butter
Salt, pepper, ground dissolved saffron to taste

Preparation

Place the meat in a medium pan; add salt, pepper, and turmeric and stir. Add the chopped herbs and stir for another minute until mixed. Take off the heat, add the cooked rice and allow to cool down. Then, add the saffron and panir. Peel the onions and make a vertical cut in the middle of each one. Place in a pot of boiling water and salt for ten minutes. Drain and allow to cool. Separate the layers one by one.

Place some of the meat mixture on every layer and roll up like a spindle. Place them in a non-stick baking dish. Pour the melted butter over the dolmados and cook on the middle shelf of the oven at 180 degrees centigrade for 15-20 minutes until golden.

Your dish is now ready. Decorate with fresh herbs and a variety of your favorite sauces and serve.
